According to Iowa and Ohio State University researchers, pairing red, yellow, orange, and dark-green vegetables with a little bit of fat helps the body absorb cancer-fighting and heart-healthy nutrients like lycopene and beta-carotene. This study showed that you'll need to consume two grams of added fat per one hundred grams veggies to reap the maximum nutritional benefits.
